Inspired by raspberry season, Granville Island Brewing Co. gifted Modern Mix Vancouver a 6-pack of their False Creek Raspberry Ale and a raspberry-centric recipe to re-create with my own touch. Here’s what I’m calling the “Triple BC Raspberry” Salad Recipe – there’s raspberry in the salad, raspberry in the vinigarette, and, for your final dose of raspberry, a refreshing Raspberry Ale as the suggested pairing.
Triple Raspberry Chicken Salad
Serves: 4. Ingredient measurements are approximate – like with any salad, toss in more of the ingredients you have on hand, and less of those you don’t!
Salad Ingredients:
- Cooked Chicken – 2 breasts or thighs (leftover chicken from last night’s dinner works well for salad)
- Raspberries – 1/2 cup
- Mixed Greens – 1 small box
- Avocado – 1 diced
- Toasted Hazelnuts – 1/2 cup
Vinaigrette Ingredients:
- Raspberries – 1/2 cup
- Olive or Hazlenut Oil – 1/2 cup
- White Wine Vinegar – 1/4 cup
- Maille Dijon Mustard – 1 big squirt
- Granville Island Brewing Raspberry Pale Ale – 1 tablespoon
- Salt and Pepper
Drink Pairing:
- Granville Island Brewing Co. False Creek Raspberry Ale
Directions:
To make the vinigerette, crush raspberries and mix all ingredients together in a jar, put the lid on, and shake. Toss together all salad ingredients and drizzle with the raspberry vinaigrette. Pair with Granville Island Brewing Co’s False Creek Raspberry Ale. Enjoy!
