When someone asks for recommendations for fine dining in Vancouver, or a carefully crafted cocktail, more often than not, the award winning Chambar Restaurant in Gastown makes the list.
A predominantly European-influenced restaurant, Chambar offers a unique pairing of Belgian cuisine with North African influences. Organic and local ingredients are combined to create dishes which reflects the seasons. The menu is a diverse offering of appetizers, moule frite and main courses of lamb, duck, venison and sustainably caught fish.
One month before the opening of its new location in August, Modern Mix Vancouver was invited to visit its new digs, which will be just down the block from its current location. It will be right next to Stadium Skytrain station, so people walking up the steps beside the station can take a peek into the windows of the heritage building housing the restaurant.
Still in its construction phase, the new Chambar was still a bit more “hard-hat” than we had anticipated, but with a bit of guidance (and imagination!) this is what we saw.
The bar, upon entry, will be inlaid with walnut and tinted resin. Blood red booths will be high enough to allow for privacy, while Italian designed chairs, and an eclectic and rotating art collection will complement Chambar’s heritage surroundings. Tables will be unobstructeded by linens and will blend in with the original hardwood flooring and brick and beam character of the 1912 building.
There will be more seats and more room and light compared to the old location. And downstairs, a huge new kitchen will turnout breakfast, lunch and evening menus next to the private dining room, which will be perfect for parties and corporate functions.
Meanwhile, on the main floor, a make-shift bar was churning out premium cocktails for the guests of this sneak-peek. We came just in time for drinks and dessert.
The new location of Chambar at 568 Beatty Street is expected to open sometime in August and something to look forward to. Stay tuned on Modern Mix Vancouver as we announce the grand opening date! Meanwhile, the current location is still open for service.
