Leading the culinary program at both Reflections and all hotel dining venues, Chef Ken Nakano has created a classically-inspired, locally sourced light-bite menu. Signature items include: scallop ceviche with endive salad, tomato aioli and lime vinaigrette; striped shrimp terrine with red pepper romesco sauce; smoked sablefish & salmon croquetas; and grilled chorizo sausage with honey mussels and saffron vinaigrette.
