“Save on Meats” in Gastown Now Offering Cooking Classes this Summer

Gastown icon Save On Meats is offering three cooking classes to the public this summer.  Taking place in July and August, these one-time weeknight classes will take you through the basics of poultry butchery, sausage making and canning and preserving.

Canning and Preserving ($85): During the canning and preserving classes, students learn essential techniques for home water bath canning sterilization, pH balanced recipes and processing. Two seasonal recipes will be taught in class, each with a unique twist and flavour combination. Past recipes include spiced pickled beets, organic spicy dill pickles, strawberry applesauce and earl grey strawberry jam. Students should expect to roll up their sleeves and participate if they want to take home a jar of the good stuff. (July 15, 6:30 – 8:30pm)

 

 

Sausage Making ($85): This class will cover the introduction to sausage making with an overview of the equipment used and needed, a discussion of different casing styles and the advantages and purpose of them. Our butchers then guide students through the seasoning and flavouring process to help them develop an understanding of the different flavour profiles. (July 16 & 30, 7 – 8:30pm)

Poultry Butchery ($75): The poultry butchery class will take people through the whole process from buying a whole bird to processing it and utilizing every part of the animal. Set in the historic butcher shop, students will learn how to carve a bird including alternate cuts, and how to make delicious stock. No one leaves empty handed. In addition to butchering skills, participants will leave with two chicken breasts, two boneless chicken thighs and a litre of fresh chicken stock. (July 9 & 23, 7 – 8:30pm)
